- Lentils – 3 cups
- Peeled garlic – 2 cloves
- Water
- Carrot – 1 cut into 2 pieces
- Onion – 1
- Celery stalk – 1 cut into 2 pieces
- Tomato wedges
- Salt
- Bay leaves – 2
- Ground pepper
- Thinly sliced green onions – 6
- Minced parsley – ¼ cup
Ingredients for Lemon French Dressing:
- Olive oil – 1/3 cup
- Mashed garlic clove – 1
- Dried thyme – ¼ teaspoon
- Fresh lemon juice – 3 tablespoons
- Salt and pepper
Preparation: Take a large saucepan and put the lentils into the saucepan. Add water and boil the lentils over low heat. Now add celery, bay leaves, carrot, garlic and onion. Heat the mixture until the lentils become tender. Make sure that the lentils are not mushy. The next step is to drain the lentils. Then remove the vegetables. Put the lentils into a bowl.
